Skirt Steak Salad


2 servings

10 oz skirt steak

1/2 bag of romaine lettuce

1 purple onion

12 cherry tomatoes

cubed butternut squash, roasted

(1/2 c Tacos - optional if you want to add a carb/bread serving)

2 Tbsp Nish Nosh dressing


Instructions:

-Soak steak for 2 hours in water

-Bake on 350 for 90 minutes covered tightly.

-Pam and salt the butternut squash and bake uncovered on 425 for 30 minutes until edges are brown.

-Slice the steak in big chunks and combine the salad ingredients.

-Season with Nish Nosh dressing.

-Crush the tacos and mix in before serving.
