Pizza Bella


2 oz (skimmed) shredded cheese

4 large portobello mushrooms, stems chopped and reserved

pinch of salt

1/2 C canned crushed tomatoes

1 tsp minced garlic

1 C chopped spinach

3 Tbsp Dan Papino Sauce (or any marinara/tomato sauce)


Instructions:

-Preheat oven to 400 degrees

-Spray a baking sheet with nonstick spray

-Place mushroom caps on the sheet, rounded sides down

-Sprinkle with salt and give 1 spritz oil spray

-Bake until slightly tender, about 8 minutes

-Remove sheet, but leave oven on. Blot away excess moisture from mushroom caps

-In a small bowl, mix crushed tomatoes, garlic, spinach and sauce

-Divide mixture between mushroom caps

-Top with chopped mushroom stems, sprinkle with cheese

-Bake until mushrooms are tender, filling is hot, and cheese has melted, 8-10 minutes. Enjoy!

Tip: An easy way to measure 1oz of cheese is with a schnapps cup. just push in as much shredded cheese as you can.


Obviously you can add more cheese to the non calorie concerned folks:)
