Letcho

This is an old time Hungarian favorite. I use this recipe all year but it's a real staple on Pesach since it's so flavorful and filling. Best of all it is counted as a free vegetable so use it as a side dish for all your meals or even an afternoon filler. (you can also add diced peppers if you'd like)


1 Tbsp oil

2 Onions diced

5 Zucchini - cut in rings

5 Beef Tomatoes sliced

1 1/2 tsp Salt

lemon juice


Instructions:

-Saute onions for 20 min on a low flame covered

-Add cut up Zucchini and Tomatoes.

-It will create its own juices.

-Season with Salt.

-Let it cook for a few hours.

-Do not add water!
