Butternut squash soup

This is probably the easiest soup you'll ever make. Butternut squash has a sweet flavor so this is obviously a sweeter soup. The best part about this recipe is that you don't even need to take out a knife!!
1 tablespoon oil MEASURED!!
2-3 diced onions (or 2 bags frozed diced onions)
3 bags frozen butternut squash
water to cover
salt
dash of nutmeg
(optional diced apple)
Sautee onions in oil. Add butternut squash and water only to cover. (the less water the thicker your soup will be.) Add salt and nutmeg. Cook for 1 1/4 hrs and blend. (My mother adds diced apple as a crouton crunch.)
Fresh butternut is always yummier but i opt for the easy way out.
Please note that on most of the One on One Health programs butternut quash is a FREE vegetable.
